Family tradition - Gumbo with the left over turkey.

The ingredients - Big gumbo needs a big roux

1-1/2 cups oil
2 cups all purpose flour
3 medium onions
2 bunches of green onions
8 stalks celery
bunch of turkey
bunch of andoille
About 1-1/2 gallons of turkey stock
Little salt
Little cayenne

Doesn't need a lot of seasoning - the andoille is well seasoned.

Made the roux in the CI pot then transferred to a large pot. The roux took 7 minutes to brown a little longer than normal due to the size.

Thats a good idea for the leftover turkey,kinda get tired of them sandwichs. :lol:

That looks good! You don't serve it over rice?

I've got a bit of leftover turk... some home made andoille in the freezer... Guess I bedda get to da store and grab me some green onions and celery!
