After the cold front came through Sunday night, I knew I had to cook up a batch of chicken and dumplings. It's a favorite around our house when there is a chill in the air. It hit just the right spot, too. :wink:

I really don't have an exact recipe but I will tell you how I do it. First, I boil a whole chicken or chicken pieces. This time I used 5 leg quarters. You can cheat and use boneless chicken breasts, but I think you get a lot more flavor in the stock if you do a whole chicken or chicken pieces. When it is done, remove from pot and de-bone. Shred chicken and add back to the pot with all of the remaining stock and continue to boil. Then, slice a whole package of large flour tortillas into 1" wide strips and then cut some of the longer strips in half. Add them to the pot slowly - about a handful at a time and stir in. They will swell up in the pot pretty fast, so you may or may not need to use all of them. I have had to add water to the pot before because I put too many in there and it got it too thick. Then, add salt (I use coarse salt - Kosher or Sea Salt) and garlic salt to taste and parsley flakes. The long part is boiling the chicken - everything else goes really fast. I can do a whole batch in about an hour and 20 min or so. Enjoy!

That looks great! Chicken soups are my favorite and are so easy to make that they get made a lot around here.

I don't like those big heavy biscuit sized dumplings in soup, but I like your idea of using the flour torts... Think I'm gonna have to give that a try.

Flour tortillas work great. I don't like big dough balls in mine either. These swell up to just the right consistency and are as easy as opening the package, slicing up and dropping in.

I like the big ones, but that's just me :lol: I've been eating it that way my entire life though. Still, yours looks great tex! An idea I'd like to try just for something different.

I love chicken and dumplings, I have done the flour tortillas. But the best I have found ,are made by Mary B's Called kettle dumplings. Find them in the freezer section. just like old fashion dumplings. They don't puff up or get gummy. CF :D

Toby that is what I was planning on for dinner tonight, However I had to go to Waco Today and didn't get back to late so it was Wolfs no bean enhanced with some of my chili fixins. not comp quality but very tasty. C&D is on for tomorrow. I do the tortilla thing too.
Never met a cow I didn't like with a little salt and pepper.

That's almost the same as mine! LOL

I do julienne an onion or two to simmer in with a whole chicken or half a dozen leg quarters and some salt, pepper and butter. Simmer, cool, de-bone, etc. When it comes to the dumplings, I crack open a can or two of 'whomp biscuits' ( the ones in a tube that you whomp against the counter edge to open). I tear each biscuit into 5 or 6 pieces and toss them in, where the puff up to just the right size. Here's a link to my full Chicken & Dumplings recipe & pics.

OK You've got it rollin' my wife is putting on a chicken now for chicken and noodles. Her's are exactly like my mother used to make all homemade and great. The noodles are fat like small dumplings and a bit chewy. If she made these more often I'd have to spend more time with Jenny Craig....

My grandmother and mother always made the dumplings by just droping in canned bisquets and letting them cook on top of the gravy.
That is the way I do them today,
Talk about comfort food!


BTY, I season and sere(fry) the chicken in oil first then add liquid and boil, MMMMMMMM

Now I'm gona have to make it this weekend!
