IMO there ain't no other way to cook dove than on a grill..........wrap em around a jalapeno pepper, and wrap that in bacon and throw it on the grill. Will make a puppy pull a freight train................

Okay, here's a different twist to what ya'll are talking about.

Butterfly the breast - a cut down both sides deep enough to reach the breast bone.

Clean the seeds out of a jalepeno pepper. Slice it long ways into 4 long strips.

Place 1 strip of jalepeno under each flap of the breast.

Roll the breast lightly in Brown Sugar, fresh cracked pepper, and garlic powder.

Wrap in the fattest and thickest slice of bacon you can find.

Throw them on the grill until the bacon is crispy.

The Brown sugar will carmalize under the bacon.

Dove can be a little on the gamey side but this will satisfy the most finicky eater.

Best dove I ever had come from a fella who's wife run the local KFC up in Wilbarger County. We was planning a big party so everybody gave him whut dove they had in the freezer and he took em in an cooked em like the original recipe on the KFC. Seasoned and deep fried under pressure. Whew them things come out good. Made em taste just like quail. Now I dont eat em or hunt em anymore cuz they is Holy Birds ya know? That is whut Noah let loose on the Ark one time to find dry land. Glad there wasnt no rednecks waiting with shotguns on that deal:)

Iam with low-and-slow, and Coyote. I just soak em overnight in red wine, then add the peppers and bacon. Haven't tried the cream cheese but it sounds real good!
