Pasta Carbonara w/Salmon fillets

Postby JamesB » Mon Oct 26, 2009 7:42 pm

It's been raining non stop here for the last two days, so I decided to cook in the house. I had a side of salmon that I was gonna do on the drum, but... I remembered Ftby00's pasta carbonara post from a couple of months back. Heck, I had most of the ingredients... Well almost... had to use bow tie pasta instead of linguine and dried parsley instead of fresh

Ftby00's carbonara recipe --->>> viewtopic.php?f=5&t=7891

So, I started with somewhat the same stuff called for in his recipe. I had a 12oz package of bacon (instead of 1lb) that I diced. I also added some cream to the beaten eggs in the recipe before I tossed the pasta
Image
My youngest always likes to help me in the kitchen, so she fried up the diced bacon
Image
Once the bacon was cooked off, time for the onions. I added the garlic shortly after.
Image
I already had the salmon in the fridge, so I cut 4 portions and seasoned with coarse salt and fresh cracked black pepper
Image
Pan seared the salmon in a CI skillet, flipped and then into a 350° oven to finish while I tossed the pasta
Image
Tell ya what, I'd do this again...
