Gumbo started --- finally done!

House is empty, so I had the choice of what dinner would be, so I decided on gumbo. Got it all simmering now, probably another couple of hours. Make up some rice, and I'll be ready to eat.

Everything turned out great. All is now well! Spices just right, chicken tender and the sausage was good. Afine meal, indeed!

Mmmmm...love me some gumbo.

I'm sort of a mutt, I've lived half my life in Texas and half in Louisiana. My mom's side of the family lives in Louisiana and my dad's side in Texas. I've been moving back and forth most of my life. So...I know all about that gumbo...although, I did live in the north east part of Louisiana :wink: a lot different than south Louisiana :mrgreen:

Serious comfort food right there. Chicken &sausage is my favorite.

A big pot of gumbo sounds good about right now. I'll be doing that myself soon. Gotta smoke some chicken or turkey for it.

nice roux - nice gumbo.

The smell of a dark roux reminds me of grandmas house - I can smell that one through my speakers. 8)
