Nice red beans James. Beans and pork - I can live on that.
Made something similar today - 2 # black beans, 2# bacon, onion, celery, cilantro, and jalapeno.

Never made it from scratch. I use the zaterands(sp) and doctor it up.
Just made jambalaya friday night.

Thanks all, it was def. good eats!
This one started out with dry beans soaked overnight. Cooked off some onion, celery and bell pepper in a touch of olive oil and then added the beans, chicken stock to cover, a couple of bay leaves, garlic, S&P... Added some smoked up rib trimmings and let it perculate until the beans were tender and then added the sausage... Even the kiddos ate it up.

Here in New Orleans that's a traditional Monday meal. I planned on cooking some in the slow cooker today but got too busy to chop the onions & stuff last night so I'll have to get it all together tonight to cook tomorrow.
