I just got home from picking up what I needed to cook this. I'm gonna throw some together tonight. Been looking for something different to cook, so this will be a welcome change!

Kenny - If ya mess this one up, you might as well retire from cooking altogether. I just had leftovers for lunch and my wife is gone tonight so it will likely be supper too. I'll be good and tired of it after today.

No tex, can't see myself messing this one up. Sure look forward to trying it though. When I got home from the store, my daughter was outside with my granddaughter (they live next door to me) and I was telling her about it. She just said to call her when it's ready

OK, this stuff really is great! Sometimes simple is the best. I ended up having to give the recipe to my daughter and her future sister-in-law
Luckily I still have some leftovers to bring to work for lunch tomorrow.

Well 95% of the time I'm just cooking for me & my son. My daughter & her husband came just to get a taste, so I have plenty left over

I have to admit, when I first saw the recipe all kinds of ideas for customizing it started coming to mind. One change I defnintely plan on trying is replacing the canned corn with grilled corn, then just replace that liquid with a little vegetable stock. Also, adding fire roasted poblanos came to mind too.
I can see that I'll end up making this a lot more complicated than it needs to be
