Pasta and cheese lover Heaven!

I cooked a new pasta dish tonight that was simply outstanding! I used a recipe from Food Network, but tweaked it a bit, due to being able to find some cheeses, and not others.
The secret to great pasta is parboiing to just under al dente. You want it a bit undercooked before putting into the oven.

Tonights dinner was a beer can chicken in the oven, as our weather turned very cold and nasty!
I used SR's basic rub and stuffed the beer can with fresh rosemary and dill. It turned out fine, although we prefer it on the grill.
I made a 5 cheese pasta dish to go with it that turned out spectacular! I cooked penne pasta,about 1 pound of Barilla whole wheat and in a separate saucepan, combined:

1 cup crushed tomatoes
About 1/2 Cup of fresh mozzarella
about 1/4 cup of gorgonzola
about 1/4 cup of Feta
about 1 cup of mixed Parmesan and Asiago cheese
2 heaping tablespoons of ricotta
2-2.5 cups heavy cream
2 tablespoons of fresh chopped basil
Poured the cheese sauce over pasta in casserole dish. It wasn't all the way melted, but very close. Dotted the top with more parmesan and butter. and baked at 400* for about 25 minutes or until bubbly!

YUMMO!!! It was so good!!! Cheese lover and pasta lover heaven!!!
I used Feta cheese because I couldn't find Fontina, so I didn't use as much since the Feta was a bit sharper. This was a great change from the normal America macaroni and cheese!

Dang..that sounds richer than 3 foot up a bull's *ss...to parphrase one of dear old Daddy's most favorite expressions. Speaking of eyetalian food you ever had any Pasta Puttaneasca? Wow..I love that stuff. I also have the world's best recipe for the stuff. I give up the recipe for free but only charge five bucks for shipping and handling. Let me know if you want it.

Yeh, BW, this recipe isn't exactly figure or cholesterol friendly! :lol: :lol:
But, dang I love stuff with cream and butter!

NOW... take the leftovers to the next level. Cut some cubes, bread it in Panko and deep fry it ! :twisted:
