Pasta Carbonara

Pasta Carbonara
Here is a really good recipe for some pasta.
1 lb. Linguine pasta
4 eggs
1 lb. of bacon or pancetta
1 1/2 cups parmesan cheese
8-12 gloves of garlic
1 large onion
1 cup chicken stock
1 cup white wine (or sub another cup of stock)
1/2 a stick of butter
1 handful parsely
1-2 tablspoons of Black pepper
Start out cutting your bacon into 1 inch pieces and frying in a pan. while thats cooking go ahead and start your water for the pasta. Dice up your onion. When bacon is done remove from the pan with a slotted spoon and then add you onions and let cook. Slice up your garlic while the onions are cooking then add them to the pan as well. Cook over medium high heat for a few minutes. If you water is boiling now add your pasta and cook for about 9- 10 minutes.Remove the onions and garlic from the pan and empty any grease out. Then place back on the heat and deglaze the pan with the white wine or chicken stock.Then add the other cup of stock and all the bacon and onions and let simmer for a few minutes. In a large bowl crack 4 eggs (the bowl needs to be large enough to hold all the other ingredients) then rough chop your parsley and most of the cheese and add to the bowl and whisk together.Now drain your pasta add to the bowl place all of the bacon and onions in and add that half a stick of butter and toss together.Add the rest of the cheese and the black pepper and a little parsley for garnish. It sounds alot harder than it really is to make.

The eggs will be cooked when you add the pasta and bacon to the mixture and toss up real good. I wasn't sure myself the first time I did this but trust me we cook this about once a week and is simply wonderful.
I think it would taste really good with some shrimp or even some grilled chicken from leftovers added in.

Looks really good, it 's one of my favorite pasta dishes. I usually make it for a late dinner or brunch on Sunday. I had it the first time about 20 yrs ago when I was in Rome, It. I got the recipe from the cafe there. Every time I taste that rich creamy sauce it takes me back there.
Never met a cow I didn't like with a little salt and pepper.

I first had it in Fiumicino... Gonna make it with this recipe this weekend.

I will have to completely agree.........looks great. And it is one of those dishes where you can add almost any leftover meat: Chicken, Ham, Shrimp, Pork ..........will definitely be giving it a try.
