I've been wanting to try some for a while, so I gave it a try. First, the trinity, sauteed in butter, some water, more butter, thyme, oregeno, and a bay leaf. Added the crawfish and some cajun seasoning. Let it simmer for a while, added some parsley and chives and a little thickener, and poured over rice. My wife wasn't interested, which was fine - more for me!!

CF, I had to go with frozen from WallyWorld. Nevertheless, it still turned out good, although it'd be better with fresh crawfish.

That's a nice looking etoufee Jack. Making me hungry and I just had lunch. 8)

It's almost impossible to get fresh crawfish this time of year. Frozen works well for dishes like etouffee, stews, fritatas, etc. Just check the package - you don't want crawfish from China. I have nothing against imported products provided they meet the quality expectations but I bought some crawfish that originated from China once by mistake and it was nasty - had to throw it out. JMHO.

Frozen is all we can get here most of the time, and it all comes from china.
Jack, wife says the only difference in etouffee and the crawfish stew is adding tomatoes makes it a stew. She should know she is coonass. CF :lol:
