smoked cheese
bought a pound of sharp chedder and one of mozzarella, cut 'em in half and then split 'em down the middle. used my little brinkman and about 2 handfulls of the small stuff that ends up on the bottom of a bag of lump. fired it up with my torch and as soon as it was cracklin good i filled the water pan with ice, put he cheese on the top rack and threw on a handfull of hickory chips. lotsa smoke and a steady 80 degree temp. 'bout 1/2 hour later 'nother handfull hickory chips. took the cheese off after 1 hour. wow! sure was good! next time i will try an hour and a half maybe 2.
