Two Bite Delights

Postby OSD » Wed Nov 12, 2008 12:37 pm

That's the name Pam gave them. :D These are great for appetizers, snacks, breakfast, or anytime. These can be cooked in the oven or ( my favorite way ) in the smoker. The smoke flavor adds just that something special to these. Serve them up with dipping sauces and watch how fast they disappear. :D I guess they are technically a Quiche. I adapted the recipe to work for cooking these mini bites. :D

Image
Start off with mini muffin pans. Need to be greased

Image
make a soft dough

Image
Take a rounded tsp. of dough and put in each muffin hole and form it up the sides and bottom

Image
now add the meat of your choice. these were crab cause that's what Pam wanted.

Image
Now mix the egg, 1/2 & 1/2, onion and spices. whisk together.

Image
Now pour approximately 1 1/2 tsp of the egg mix into each muffin

Image
now put shredded cheese of your choice on top and put into oven or smoker

Image
hot out of the oven or smoker

Image
served up with dippin' sauce. :D My favorite is pulled pork or beef with hot pepper cheese. :D
I'll put the recipe in the recipe section. :D

Looks fantastic; wish I had access to fresh sea food in my neck of the woods.
