Wilted Greens

I fixed one of my favorite dishes today for lunch. Wilted Mustard greens. My method:
Fry 2 or 3 slices of thick sliced bacon. Crumble when done.
Reserve grease.
Saute some chopped green onion blades in grease.
Chop or slice about a gallon of mustard greens fresh from the garden. Dump in large skillet along with onion, bacon pieces, and grease. Stir well to coat greens. Cover and cook over low heat until about 1/2 done. Stir occasionally.
Nuthin' better! Will work with turnip greens, collard greens or mustard, or a mixture.
That's all I had for lunch. Didn't want anything else.

Betcha that was good. Them are by far my favorite brand of greens. Give you a secret you might already know..they make a wonderful raw salad too..if a person ever want to get lazy and skip the wilting part. Make you chunk rocks at lettuce. Course if nearly takes a salad spinner to wash the sand out of em and dried up enough to eat. Everybody got one of them thangs nowadays I'm sure. Guess that would also need to be an immature version of the species. Sorta like they got at Wally World. Great job!!

Bigwheel: I am a greens conneseur (sp). For the past few days I have been eating a salad for lunch consisting of Romaine Lettuce (store bought), mustard greens, onion, and salad dressing. Goes down pretty good. I love any kind of greens except swiss chard. Never could like that. Ever have a steaming cup of Turnip green potlikker? I have been known to drink it like a cup of coffee and sometimes I like to crumble saltine crackers up in the likker and eat it with a spoon. Any way you fix greens, I am pretty well satisfied.

Those wilted greens sound mighty good! I do like greens - most any kind. Can't beat'em for fiber, flavor or good eats!

Never tried it with anything other than looseleaf lettuce but thinking I will!! I add a little vinegar to the mix as well and is Definitly one of my favorite salads. We do most greens in olive oil and garlic, kinda steamed in the oo. Wicked good.

Pretty much like we do greens at home... Only thing we do different is to throw in some sliced garlic cloves in there when sweating the onion... Good stuff!

James: I thought about adding sliced garlic, but I never had tried it and I didn't want to ruin the first batch of the season.
I will try that next time.

Sounds great! The only thing my grandmother would have added was a splash of some kind of vinegar. But she was famous for her wilted lettuce leaf salad, so maybe it's different with other greens.

I've never in my life had wilted greens. Although I'm willing to try anything doused in bacon grease :P

Bennigans used to make a real good sweet raw spinache salad with hot bacon grease. It was real good. Guess they all closed down now. Are around here anyway. Coulda tole you they wouldn't make it. The beer was way too expunsive.

We always saved the vinegar for after the cooking was done. We splash on that white vinegar that's got the peppers in the bottle...

I think the best salad I ever had was the wilted spinach salad at Jonny's in the stockyards in Omaha. Don't know if it exists anymore. Good eats there.
