I made one of the wife's favorite dinners, seafood pasta.
Instead of a salad, we had broiled tomato slices.
First cut a 1/2" thick slice of tomato, season with salt & pepper, set it in the freezer for around 4 minutes ( long enough to get a little firm and cold ), then layer the top with aged Provolone cheese slices, and then some roasted red pepper. Then put it under the broiler for a minute or 2 to melt the cheese. Take out and sprinkle the top with some Parmesan cheese and serve.
This tastes great with the warm melted cheese while the inside of the tomato is still cool.
the pasta sauce is just a modified Alfredo sauce. I saute some minced garlic in butter, then add some chopped mushrooms. When than is almost done I add some chopped clams, and last some tiny salad shrimp. When that is all done I add it to the Alfredo sauce and let it simmer for a couple minutes to finish. Then pour the sauce over your favorite pasta. I used thin egg noodles this time. This is really a quick meal.
Of course some cheese garlic bread and some wine.

Very nice meal. I like the tomato idea. Gonna have to give that a try. Pasta looked great, although I'd have to hide the clams from my wife, or she'd be cooking something else!
