I just had a great holiday in US, Las Vegas and California. Didn't make it to Texas yet ... next time for sure!! :)

I had loads of Mexican foods from breakfast to dinners among other lovely dishes. I quite got in to Mexican food during this trip. Bought a nice book, The Tex-Mex cookbook. Tried already out some dishes from it. I particularly liked the section of breakfasts. I've done already several times 'Ox Eyes' or 'Eggs in heck' as they descibe it.

Basically it's eggs poached in a hot tomato sauce served with a tortilla. Excellent breakfast.

Any comments or any other ideas for nice and spicy breakfasts?

eggs and some chorizo sausage is one of my favorites, if you can find some around your area

When doing texmex for breakfast I like chorizo sausage, eggs, re-fried beans with tortillas and some salsa. Throw some shredded cheese in there and I am not hungry again until dinner time!

Don't forget the hashbrowns. I also sometimes forgo the salsa in favor of green chile :D
