Crookneck Squash Pie

We have yellow squash going nuts in the garden and I was looking for new ways to use it and ran across a Squash Pie that sounded good so I turned it into my own version and I'm telling you even if you don't like squash this is a must try! Turned out Fantastic!

Squash Pie
1 c. evaporated skim milk
2 eggs
1/2 c. honey or 3/4 c. sugar
1 tsp. cinnamon
2 c. cooked yellow squash
1 unbaked pie shell
Cube and cook yellow squash in small amount of water until tender; drain and cool. In blender, blend milk, eggs, cinnamon and honey. Add cooked squash (cooled). Blend together 2 to 3 minutes. Pour into unbaked pie shell. Bake at 400 degrees for 10 minutes, then 350 degrees for 35 more minutes or until set. Cool, then refrigerate until COLD.

Wow! Going into my recipe file! You know, I hate pumpkin pie, but I love squash, zucchini, etc. :shock: :? go figure....

Well, I'll admit to being one that doesn't care for squash, but I did copy the recipe in case I ever get the inkling to give it a go... The pics do look really good!

Not sure if I would like that or not, I do eat some squash....as good as it looks I am betting I would!

Looks good. :D I'm not a big squash fan, but this kind of reminds me of a sweet potato pie so I may try it sometime.

I join the crowd in the "I ain't big on squash" but that does look good. I'm willing to try anything once, so copied and pasted for future trial!

Actually, squash pie reminds me of a homemade sugar cream pie. Some fresh nutmeg would be good grated on top too!

Funny how folks say"I'm not big on squash then you make a squash dish they've never had before and they eat it all". We had been married nearly 20 years when I brought home some crook necks and Midge said " I don't like them". So I said fine I'll make them for myself. I breaded and fried but could not stay ahead of Ms. "I don't like them".
I have never had squash pie but it looks good and bet I'd like it.

Thanks for the recipe for squash pie. Our crooknecks are starting to produce. We usually stir fry or grill.

Over the years we have made zucchini bread so I'll try to make "crockneck bread" in a couple of weeks.
