new sausage for fatty/fried rabbit

Postby JaCK2U2 » Sun Jun 29, 2008 6:50 pm

Didn't have time to do any smoked meats, so did a change up on a fatty. Bought some sage pork sausage and mixed it 50/50 with JC Potter hot sausage. Used pepper jack, american and some roasted bell peppers. The sage was really good. Gonna do that again.
Fried up some rabbit, with mashed taters and gravy, green beans and garden maters. Been a long time since I had rabbit - first time for my wife. Turned out good.

It also been a looooong time for me too since eating rabbit. We have lots of cottontail running around the electric utility right of way. Are they good eating??? Does smoked rabbit taste like smoked chicken? They look so small...

Thanks for sharin'...

They are small - I could not find anything on smoked rabbit, so I fried them. I did, however, find a recipe for "hot legs" - made just like hot wings, except you use the front legs on the rabbit.
Rabbit turned out good, and is good for you....less cholestorel, no grain, etc. (that isn't why I cooked it, though!)
