Was in Albertson's yesterday. They had bone-in chicken breasts at a buck a pound. Picked up a pack. The Mrs, well she likes chicken breast with no bones and no skin. No problem. 10 minutes later I had a pot of stock working with the bones and 3 nice boneless skinless chicken breasts begging to get roasted.
Did 'em in the oven. EVOO and Sucklebusters on mine, EVOO and garlic pwdr and season salt on the Mrs. In the meanwhile, reduced the "stock", pulled off the remaining meat and put back in the "stock" and in end used to make gravy. Ended up with mash spuds, gravys, chicken and some veggie I can't spell but Dana Carvy did a song of it.
