Chicken Tortilla Soup

Chicken Tortilla Soup

Well, it's soup season around our casa. I think I posted this soup last year, but didn't post the recipe or process. We're trying to narrow our waist's a bit at the moment, so I bypassed my usual homemade fried tortilla strips on top. Anyhow, here ya go...

4 boneless/skinless chicken breasts
1 medium yellow onion
1 green bell pepper
1 jalapeño
4 cloves minced garlic
2 cups of corn
4 cans of chicken broth
2 cans of tomato sauce
2 cans of diced tomatoes
1 tsp chili powder
2 tsp cumin
1/4 tsp cayenne

Dice all veggies and sautée in olive oil with the minced garlic.

Add all of the remaining items to the pot and bring to a simmering boil. After about 30 min, pull the chicken breasts out, shred and return to the pot for about another 30 min.

Time to put in a bowl, dress with your favorite toppings (avocado, cheese, tortilla strips, etc...) and dig in. It'll warm you up!

That looks great Toby. I keep gravitating towards chili, but would like to make tortilla soup that looks like that!

You Betcha - - - I got this recipe from a former Chef at Olive Garden and it's pretty larapin :cheers: :chef:
The only change that I make is that I use White Taters and I don't peel them.
