Pickle Fiasco

Pickle Fiasco
I made a ruin of three giant cucumbers. The 'giant' part is not an understatement. This was my first mistake. I should have asked for the minis.
Two of the monsters went into a homemade brine, to make pickles, because I believed what they said about that on the innerwebz.
The pickles are horrible. A starving goat wouldn't eat them. I plan to leave them in the fridge until I feel justified in tossing them in the garbage.
Not wanting to repeat the experience, I took the third Bryson deChambeau cuke and sliced it, added garlic, dill, green onion and celery, and cooked it in butter for Le French Medley.
It is actually quite tasty.

LOL I do the very same thing.
It's too bad you weren't happy with them, because they look excellent!

What was the problem with the pickles Sailor? Were they bitter?

My Grand Daughter has liked Dill Pickles since she's been old enuff to chew them so I started using the "Sun Pickles" technique/recipe and really liked and enjoyed them.

I followed the recipe. Fresh dill, garlic, mustard seed, salt, sugar, vinegar, water. All I could taste was vinegar.

How long have they been in the jars?
Maybe it takes time for the flavors to settle?
They look good and I love pickles.

We call em gerkins down here, we grow them and I bottle them. I brine mine overnight then heat up my pickling mix and put gerkins in fit a few minutes then bottle .mine are 10/10 and sought after for swaps, they are sweet as.
My mix is white vinegar sugar and some of the spices you use plus more, celery seeds yellow mustard seeds bay leaf and a few others.

Thanks, everyone. They had rested for a week, as the recipe suggested.
But yesterday I 'fixed' some of them by taking them from the Bad Jar and throwing them in with a half-eaten jar of commercial pickles that still had a lot of brine. (Boar's Head Dill).
Agree with Russ et al on starting with smaller cukes. In the past I had re-used brine from jars of kosher dills, bread and butter, etc, just throwing in a few cuke slices and maybe some onyawn and carrot.

There are actually several good “ refrigerator pickle recipes” to be found online. Like Russ, I have several home recipes I use but if you’re just wanting an easy, home made pickle, try Mrs Wages. It’s a couple of Bucks and it makes fine pickles. If you’re just wanting the refrigerator pickles you can skip the vinegar and water bathing. I probably can 100 jars a year of various flavors and will be glad to help; just PM
