Alligator Sauce Piquante - excuse the length
This was my very first time to prepare this Creole/Cajun Recipe and I believe it's the tastiest one that I've ever cooked. I'll let the pics speak for themselves but the taste is a "must experience" IMHO
The only things I did differently was I used only Rotels and no Mater Sauce, made my own Roux, no wine, no "worst-ever sauce", no sugar and substituded chicken broth for water. I also only simmered the final mix for 2 hours and even then, the alligator meat melted in your mouth and in the pot as well.
I only used 1lb also and adjusted the recipe accordingly
I have not deserted Suckle Busters but this spice Company is owned by a former Customer of Mine.
By Customers, I mean that, when I was doing Farrier Work, I took care of their Horses Hooves.

Sounds like a good idea - - - - I would think that Dark Meat might fare better thru the long simmer time.

Oh my goodness Parts. No apology needed as that cook definitely warranted such a detailed post. That looks absolutely fantastic. Love me some gator. Usually of the fried variety but I’d be all over that!

Thanks Sooner, I bought 3 of those pkgs that said "Filet" but you can see that they were just small pieces (nuggets) instead. I would love to find a larger tail piece and do it like a Stuffed tenderloin with the "Cajun Trinity" for stuffing and wrapped in bacon but I may not be able to afford it. These were $15 per pkg. but no complaints after tasting.

I started hiring my yard mowed and I don't miss it at all.
Had me two more full bowls of the Sauce Piquante just now. Think I may skip a day or two now.

When we first bought this place I used to try and do it myself. But I am just gone to much to be able to keep up with it. Haven't owned a mower here in many years. But we still keep up with it at the lake house.
