Venison Hamburger Soup

Haven’t been in da hood for a while - sometimes life gets in the way

No venison - use beef

Ingredients
1-3/4 pounds 70/30 ground venison/pork
1 large onion
1 bunch green onions
1/2 bell pepper
3 stalks celery
1 jalapeño seeded
3 carrots - 1/4” dice
3 cloves garlic
4 red potatoes
6 cups chopped cabbage
2 cans beef consommé
1 can roasted tomatoes
1 can corn
1 cup parsley - chopped
Salt and pepper to taste
32 ounces beef broth

Brown the ground meat in a large pot.

In a separate pan sauté the seasonings until the onions are clear, adding the garlic at the end.

Add the seasonings, consommé, and tomatoes to the ground meat and simmer about 15 minutes.

Add the potatoes, cabbage, corn, and beef broth. Simmer about 20 minutes.

Adjust the amount of beef broth to your taste.

I like to garnish with radish and avocado and add a little Parmesan.

Optional - substitute some of the beef broth with V8 juice like MaMaw used to do.

Looks great, Amigeaux, I really miss having venison in the freezer all the time, since I quit harvesting them. I really like that Combo/Recipe also. :tup: :wav: :chef: :cheers:
