Beef navel experiment

BIL scored me a beef navel yesterday. 19.5# cut into 3rds. Brining the smallest one with cure #1, kosher salt, black pepper, garlic, chipotle and guajillo. Will let it do it’s thing till Monday. Hit the smoker loaded with pecan.
The other 2 will be done, one black pepper and garlic. The other I’m thinking a green chili paste. Hatch, poblano and jalapeño maybe fresh garlic as well. :texas:

Can't wait to see this one develop - - - Beef Navel is something I've never heard of or much less tried.

Think of it more as pork belly but beef belly. If you’ve ever seen beef bacon, that’s it.

I’d never heard of it either till my BIL started doing them. Simple curing process and smoke to an internal temp of 150* or so. Then slice and brown/crisp in the old cast iron.

After 5 days in the cure it’s time to spend the night naked in the fridge. Hit the smoker in the morning, pecan splits set on low~n~slow.

She’s done. Just under 5# starting weight. Yesterday morning turned into 4:00 in the afternoon. Put 4 hrs. smoke on it. Butcher paper wrap and in the oven for another 8 hrs. Originally was going for 155* but didn’t like the probe test so took it out to195*, probed perfect. Texture is between brisket and short ribs, VERY rich!

If the deli had it would most likely be called Beef Bacon.
