A different , small Breakfast Idea

It's just the two of us and I used my imagination and what I had on hand , we enjoyed it with a slice of cinnamon /sugar toast . it was a perfect portion .

I fried up 2 medium sausage patties . Put about 12 frozen Tater Tots on a small paper plate and defrosted for 25 seconds . Beat up 3 eggs .

Sprayed ramekins with Pam
crumbled up a couple of Tater Tots in bottom
crumbled up the sausage [pattie on top of that
divided the eggs and poured on top of that
a light layer of shredded cheese
another layer of crumbled tater tots on top

It was something different and tasty

RAMBO RAMEKINS:

We didn't have tots, so we used chopped fries. And we didn't have round ramekins, so we used Corning squares.

That would last 3 seconds wid me. Have to try dat w some green chiles and hard summer sausage.

I like that Rambo. Good way to make individual servings and can tweak it to each persons tastes. I’d take some jalapeño in mine for sure
