Chicken Enchilada Pizza

After our Easter meal we decided that evening a pizza was in order.

The chicken was poached in a can of enchilada sauce, then shredded.

Instead of regular pizza sauce we use FF refreid beans as the base, then a little enchilada sauce so as not to soak the crust. Added the chicken, veggies and 2% cheese, a little more enchilada sauce and some TX Heat.

Into the oven directly on the rack for about 10 mins until cheese is melted, then topped with shredded lettuce and avacado (that's a good fat) and more Texas Heat.

I want to try this on the grill rather than the oven.

Yes it is. It is the thin one as we like a crispier crust. It does not crisp up well on the pan, so direct on the rack (or grill)

I'd love that except for your "Texas heat". lol I made pizzas from leftover bbq yesterday but have never tried any like you described. I'll be saving your idea for future use!

Several years ago we had one, but I don't think it was too good of one...it broke right there in the oven :shock:

Been thinking about getting a new one for when I try grilling them...

Any suggestions on a certian type? Is one any better than another? I could get one for a BGE.

Exactly, ours is Pampered chef as well and is pitch black now from all the use. I'll bet that one from a kitchen store would work well and not be as expensive as Pampered Chef.

Just asked the wife and ours came from Pampered Chef also. :D I would think a place like Bed, Bath & Beyond would have them. And most likely a lot less money. :D
