Cooked a pot of chicken and potatoes for dinner. Tasted great and very warming in cold weather.
Here's the recipe for those who will give it a try:
Cut 4 potatoes in small chunk. Cut 2 yellow onions and 1 red bell pepper in pieces.
Add potatoes and onions to a pan and cook until onion is soft and shiny.
Add the bell pepper, 3 cloves of crushed garlic 1 Chopped chili and cook a couple more minutes. Add 1 tsp of paprika powder and 1 tbsp of tomato puree, 1 can of diced tomatos, 3 sliced spring onions and 5 dl. Of chicken stock.
While this is simmering cur 3 chicken breasts in small chunks and fry in a separate pan. When seared add the chicken to the pot with veggies and let simmer until potatoes are done and chicken cooked.
Adjust with S&P and chili to your liking.
Add a little creme fraiche on top of your bowl

Nice, I do a similar dish with chicken and sausage. After browning the chicken and sausage deglaze with white wine add tomato paste, chicken stock and diced tomatoes. After simmering add some pecorino Romano to taste. Mmm good!
