Fun With the Insta-Pot

When it's nasty outside, I really enjoy cooking on my Insta Pot.

Last week, I made Chicken Marbella - chicken thighs with white wine, kalamata olives, capers, and apricot slices with some minced garlic, brown sugar, and oregano.

It sounded Mediterranean enough to try, and all those flavors were pure harmony. I will be doing this again soon.

Wow,that looks really good. The instapot is really a great kitchen tool. Makes a great pot of beans in a pinch. Nice job on chicken Marcella.

I wish we got more use out of our instapot. Seems like it is mainly our dedicated boiled egg maker. We need to hunker down and try rondo some stuff in it
