State Fair Corn Dogs
So I’ve been craving a Fletchers State Fair Corn Dog ever since the Texas State Fair was cancelled this year. Yes, you could go get one from Golden Chick for a period of time, but during that time our Golden Chick was closed for remodel. Anyways, I started searching around for a copycat Fletchers recipe and decided to finally give one a try tonight. When I went to the store in search for the dogs, I found some Nathan’s All-Beef Colossal Sized Dogs for me and got my wife and son regular sized ones. Long story short, the Colossal ones were just too big! Anyhow, here is the recipe and photos to follow along.
1 C all-purpose flour
1 C corn meal
1/4 C sugar
4 TSP baking powder
1/4 TSP salt
1 PINCH cayenne
Mix gently to combine
Add
2 lightly beaten eggs
2 TBS bacon grease
Very light mix
Add
1 C water slowly while mixing
*Consistently should be just thicker than pancake batter
Heat Peanut Oil to 365 (make sure it doesn’t exceed 370)
Skewer John Morrell Beef/Pork hot dogs, pat dry and roll in flour.
Transfer batter to tall cup. Dip hotdogs in batter covering thoroughly. Pull out and flip. Gently lay in hot grease and fry 6-7 min, turning as needed.

1/4 CUP Sugar
4 Teaspoons Baking Powder
1/4 Teaspoon Salt
1 Pinch Cayenne
Mix all dry ingredients
2 lightly beaten eggs
2 Tablespoons bacon grease
Combine wet ingredients with dry
1 CUP Water - Mix slowly (I didn't even need the full cup)
Consistency should be just thicker than pancake batter
Skewer the dogs and pat try with a paper towel
Roll dogs in flour
Dip dogs down in batter using a tall cup to hold the mixture
Make sure they are fully coated
Flip upright
Gently lay in 365 degree grease
Fry 6-7 minutes, turning every so often with some tongs
3 regular sized corn dogs
2 Colossal Dogs
The Payoff!
In the end, I was pleased with the results. Next time I'll forego the colossal sized dogs and stick with bun length. I'd also maybe add a bit for sugar as I like my batter a tid bit sweeter. The family was happy and so was I. It was a fun cook - I'd do it again.

Wow - thanks for the detailed step by step. I’ve really missed Fletchers this year and when the truck has come around the lines have been insane. Might have to give it a shot. They look really good.
Anybody remember when Fletchers had actual drive thru restaurants for a brief period? I’d guess it was early 80’s. I was a kid and we had one in Longview. They had these giant fried jalapeños. Fried the whole thing. I loved those peppers.

They were good. They weren’t Fletchers good (I didn’t expect them to be), but they were good.

Joe - it wasn't until a couple of years ago when my family hosted a German Exchange Student for a year that I realized corn dogs weren't known about around the globe. Somebody brought up the subject of a corn dog one day and the look on her face was priceless. She then asked, "What exactly IS a corn dog?" When I explained, she lost full interest as she was vegetarian, but we all got a good laugh out of it. It was small things like that that I will always remember during our time with her. Food was always a fun topic and my horizons were definitely broadened.
You should definitely give them a try. I bet your boys would love them! They are a staple walking-around food at the fair. In my opinion, they must be topped with yellow mustard to make them legit. I also made up some curly fries to go along with them but they didn't make the photo show.

I will try them. And I always use mustard on hot dogs. NEVER ketchup.

I do love a good corn dog Toby. My favorite competitions are when they are attached to a fair where I can get my corn dog fix after BBQ all day.
