Smokey Gumbo

Had some leftover chicken and sausage. De-boned the chicken and cubed the sausage.

Used the skin from the chicken to season the pot.

Mixed in some course chopped celery and red onion. And some garlic.

Added some okra and shrooms.

Poured in this stuff.

Added some rice and simmered for a while.

Another fine use of "lefties." Like PT said "leftie gumbo" is good too.

Can't believe you had any of that sausage left - but, good choice for leftovers. Looks great - can't beat a good gumbo - nice job!
