Chicken stew on the BGE

Ingredients
10 thighs
2 Large onions
1/2 cup green onions
1 Cup celery
1 Cup bell pepper
1/4 Cup garlic
1 Cup oil (approximate)
1 cup flour (approximate)
32 oz Chicken Stock
Salt and Pepper to taste

Use the oil and flour to make a roux. I go hot and fast making a roux. This one took 12 minutes in a Cast Iron pot over lump charcoal on my Big Green Egg.

Add the seasoning and cook a while.

Brown the chicken.

Stir in the chicken broth.

Continue cooking until the chicken is done.

Serve over rice.
