Poor time management and poor planning really stuck it to me with this one.
Sunday night I hit Shoprite for a few items that we needed, and upon leaving the end cap in the meat section had coupon flyers for Corned Beef for 1.88$ a lb...
So of course, I had to grab 3 packages, a total of 11 lbs.
Initially, my plan was to wait till next weekend to throw them on the Smokey Joe but soon realized that weekend is already booked up.
As meantioned before, i don't like freezing raw meat unless i have no choice.
So, yesterday morning all 3 went into a cold water rinse and into the fridge. Dumped the water this morning and back into fresh cold water again till tonight.
One got rubbed with Sucklebusters Texas Pecan, another with my Prime Rib Seasoning and the 3rd with a Local Sweet and Smokey Rub.
Two got the Corned Beef Spices Packet and all got Italian Seasonings and Rosemary.
Gonna cheat and use the Convection Oven on 250 till the internal hits 150 or so, then I'll foil and add some Beef Broth like I usually do and look for tenderness between 190- 205.
I've never had one tender outside of those numbers so this is why I'm going by temp.
Hopefully all of the spices and Rubs will make up for the loss of the Lump and Smoke.

10 hrs in and STUCK here for the past 2 hrs. My guess is I should see movement upwards any time now.

Well, it took 12 hrs but it was well worth the wait.
All 3 turned out excellent, not a dry piece to be found.
Gonna munch on a few slices tonight, heating them up now with the juices and some home made Mashed Taters courtesy of the wifey.
I'm thinking Breakfast tomorrow will be a good one since all 3 of us are home for a bit.
