Lazy man's dinner with cornbread sticks
Finally I got the chance to test the fantastic cornbread stick skillet I got from OldUsedParts. He also sent me a couple of packages of cornbread mix. One sweetened and one unsweetened. I went for the latter. Mixed it with milk and an egg. Poured the mix into the preheated skill and in the oven. 20 minutes later I got great looking and tasty cornbread sticks. Love it. Tank you Parts.
The rest of the dinner was the lazy part: Bought pre sliced roast beef, pommes noisette, ready made potato salad with creme fraiche and ready made bearnaise in the store. The noisettes went in the oven with the cornbread and was ready at the same time. Nuked the sauce for 3 minutes and that's it.
Actually a very tasty dinner.
Running an accountant business we are in the most busy 3 months here so quick and fast is the way to go with dinner now.

Nailed it first time outa the Chute, Sir Joe. You might also consider doing them like Mexican Cornbread when your menu permits.

Thanks. I think I maybe overcooked them a little. Will cook them a little shorter next time. I also think they will be easier to get out of the skillet when the skillet gets more and more seasoned.
I will soon run out of cornbread mix. I have this recipe that I use. It's also very delicious and worth trying:
300 gram of canned corn
200 gram of wheat flour
100 gram sugar
1 teaspoon salt
1.5 dl milk
2 eggs
60 gram melted butter
0.5 dl honey
Mix all the dry ingredients in a bowl.
Mash the corns with a blender/mixer.
Mix milk, eggs and butter with the corn pure and pour it into the dry stuff and mix.

Everything looks great.
In the prep you didn't mention using butter in the cast iron pan. If you didn't try adding a small dab of butter to each impression then preheat. Brush it around add mix and bake. I generally find about 15 minutes is adequate for these smaller portions to cook. You are correct in that the mold with get much better as it seasons out with use.

Thanks for the tip. I brushed the mold with som oil after preheating. Will use butter next time. And only dairy butter of course.

Here's what I do to all my Cast Iron!
Scrub skillet well in hot soapy water.
Dry thoroughly.
Spread a thin layer of melted shortening or vegetable oil over the skillet.
Place it upside down on a middle oven rack at 350°. (Place foil on a lower rack to catch drips.)
Bake 1 hour; let cool in the oven.
You should then be able to just pour the batter in and bake away.
One other thing I do is to put the seasoned cast iron in the Oven while the oven is pre-heating.
When it's pre-heated I take out the pan, pour in the batter and then back in the oven for baking.

Emm- Sherry’s Mother makes fantastic scratch cornbread and she has the entire bottom of her cast iron skillet covered with oil before she pours her batter on/ in it

Nothing wrong with that - - - I keep a small can of Crisco in the Pantry with a paper towel inside and sometimes I'll coat my cast iron with that before pre-heating. That's probably the best way until you get a good seasoning on them.
Another thing that I do, or don't do, is wash my cast iron in hot soapy water after seasoning. I've gotten lots of dirty looks doing this but all I use is hot water and a clean wrag - - - "NO SOAP"

Regarding seasoning I use only hot water and the dishwashing brush to clean it. And season it like I do with a cast iron pan. Oil and butter and it gradually gets better and better.

That looks great. Love the cornbread sticks. Now you just need to make a big pot of beans. Beans, cornbread and purple onion is one of my favorite dinners.
