Not really gumbo weather in South Texas but have to keep the tradition alive.
Turkey, oyster, and andouille gumbo.
The Geaux Tiger pot, gumbo spoon, smoked andouille from Bourgeois Meat Market in Thibodaux, Turkey, and all the seasoning cut up.

Way to Geaux, Amigeaux, the weather here isn't screaming Gumbeaux yet either but after lookin gat those pics, I may just have to run the Calendar forward a couple of months.

I was thinking about leftover turkey gumbo today... in all the commotion on thanksgiving day the carcass was thrown out before I could save it for stock
