Dinner Tonight ,Top Round Braciole and Home Made Bolognese
I've been wanting to do a Braciole lately and the other night I was starting to see the bottom of the chest freezer in the garage and came across a freezer bag of some Bolognese that I made last year. We thawed it in the fridge and it went on some Rigatoni a few days later and WOW it was good.
So this afternoon its Braciole and Bolognese. Grabbed 2 Top Round LB's because they always slice thin very nicely on my 1/8" Delran Board.
Lain them out and hit with S&P, Dried Parsley, Dried Basil, Dried Oregano, Garlic Powder, Minced Garlic, Fennel Seeds, and Herbs de Provence.
Layered my Cheese assortments of Medium Sharp Freshly Shredded Provolone, Shredded P/S Mozzarella, Shredded Aged Asiago, Shredded Aged Romano, Shredded Aged Parmesan , Shredded Aged Fontina and finally but my Absolut Favorite they were topped off with 14 month Aged Shaved Parmesan...
Rolled them up, tied them, then Seared them on the Frying Pan and then into the Slow Cooker!
In the Slow Cooker is the Bolognese Sauce simmering on low already for 4 hours.
That consists of 95/5 Ground Beef, Salt, Pepper, Onion Powder, Garlic Powder, Minced Celery, Minced Vidalia Onions , Minced and Shredded Carrots , White Wine, Parsley, Basil, Heavy Cream, Bay Leaves, Pancetta, Prosciutto, Smoked Bacon, Sweet Sopressata, and San Marzano Crushed Tomatoes.
Probably summer till 11 tonight so tomorrow nights dinner should be Bangin !!
Here's a few pics, I'll update the finished ones later tonight
Thanks for looking everyone

Re: Top Round Braciole and Home Made Bolognese
Thx guys !
From what I saw last night when I cooled it down outside it looked and smelled spot on.
And as a bonus, no critters snuck up on the deck and took off with the goods overnight....
Tonight's dinner can't come fast enough

Re: Dinner Tonight ,Top Round Braciole and Home Made Bolognese
Thx Txd and Emm, it's one of my favorite dishes to make.
I think the Bolognese puts it over the top for me, especially the addition of Heavy Cream in the very end. It completely changes everything about it
