Cured lamb in process
On of our traditional dishes is cured lamb. It can be made of ribs or lamb hind saddle I prefer saddle since it has more meat. The meat is cured, smoked and dried in cold air in small storehouses. This is done on the farms.
When preparing the meat it needs to be soaked in water for 12-24 hours to rinse out the salt. This what I do today.
The meat can be cooked in two ways: Steamed over sticks of birch or simmered in a vegetable stock, I prefer the latter. It will be served with mashed rutabaga, boiled potatoes and butter sauce. Beer and aquavit is the only allowed drink.

Ok. The dinner is consumed. Not a single piece of meat left. 4 pounds on 4 people!! This is considered a luxury dinner here and we usually only eat it 2-3 times a year. Often on Christmas eve.
Served with mashed rutabaga, boiled potatoes and butter sauce. The butter sauce is only water and butter. As you can see from the pictures there is a lot of butter. About a pound in the sauce and the rutabaga.
The meat is very tasty. A bit salty, combined with smoke, fat and that particular sheep taste.
A beer and some aquavit is a must with this food. I have a bottle of aquavit that I only use with this food. As you can see from the labels backside (hard to photograph) it was transported across the equator and backyard by m/s Tampa in 1992. I bought it in 92 or 93.

Maybe a bit odd for you. This is an old traditional Norwegian dish. If you ever go to Norway and get a chance to try some of our old traditional dishes, this is the one to try.

I find it interesting. I've made quite a few "odd" animals into cured goodies.. Deer, rabbit, and squirrel, to name a few. The deer pastrami was rather interesting. Squirrel and rabbit, meh, nothing to write home about. I'll have to cure some lamb next! This one looks great.
