Decided to take KAM's suggestion about using some Boudin to stuff some peppers with. Since I can't tolerate Bell Peppers, I picked up a couple of Anaheims for the job. Used some Cole Slaw and Pickled Okra for Sides along with some HEB Jalapeno Bacon as a topping over the Boudin.
DISCLAIMER:
I take full responsibility for the final doneness of the Bacon but I've never had any problem eating any that wasn't Crisp "but was Cooked".
If I hadn't pre-roasted the Peppers, I could have taken the Bacon to the Crisp Stage.
However, they were Fantastically Delicious so thanks KAM. I will do this again fo sho
