I have made a terrible mistake and hope you will all forgive me.
I have been calling this breakfast below 'the Shoe.'
But recently I discovered this is not the case. The above is known as The Mess: some form of potato, some form of meat, some form of onyawn, and some form of egg. Chopped peppers optional. All fried in a pan.
Back when we watched Diners, Drive Ins and Dives, we liked to try recreating dishes that appealed to us. Especially breakfast!
No, the Shoe is actually a variation of Eggs Benedict, in that it contains a piece of toasted bread with an egg on top, which is then covered with either cheese sauce or Hollandaise sauce, then augmented with home fries, bacon, or whatever other breakfasty item you want, placed on top of the sauce.
I discovered my error when going through my handwritten recipes last week.
So forgive me for misleading you. What can I say. I'm old. I forget stuff.
