Viking Joe: Rule No 1 of a long marriage. NEVER EVER duplicate a wife’s recipe you know you could do better. You’ll end up as the anchor to yer own boat. And try the beef skirt steak grilled over wood for tacos. Marinate lightly overnight first; recommend a good spicy rub mixed with just a little bit of a light bodied Bock beer, and maybe a little diced onion, garlic, kosher salt, and coarse black pepper. Serve on soft flour tortillas if you can get them, garnished with shredded grilled bell peppers and a sharp cheddar. Oh baby.
Note to self too: Teach myself how to make flour tortillas this weekend.

Thanks for the recipe suggestion. I will try that. The tortillas are available here but the recipe in the link looks way better than what you buy.

Joe, you may want to hold that thought until you try some shrimp fajitas. I am not much on the fish taco thing, but a shrimp fajita will treat you well. Cook some of those up for the Mrs, and she will build that pool for you herself. You and the Fonz will be on cruise control.

That must be with cold water shrimps from the north Atlantic. I don't eat the shrimps from Asia that lives in sewage.
I'm not sure of shrimp tacos, even though I like shellfish a lot.

That looks excellent, not sure how I missed this one.
As for Shrimp Tacos, if done correctly referring to the Shrimp they are out of this world. I've had them from blah to outstanding. The Outstanding ones I've had have always come from Coastal Maine. I prefer the Maine Shrimp over Freshwater, Tiger , Brown , Pink or warm water but that's just my preference. Besides, Cold Water Maine are always smaller in size and therefore fit better in Tacos and Fajitas.
I look forward to hitting up the food trucks up there as well, gonna be a good time.
