They were perfect!!! I can't wait for next time I cook them. This was my first time and I think they came out Great!

I always put them in salt water they will get rid of a lot of mud, I usually do them twice before cooking...then right before they are through cooking drop in a stick of butter, seems to help with the easy shell extraction...

agreed, S.T., especially if you are an addict for the fat and juices in the head as I am BUT, if it's the tail meat ONLY that you're after then maybe a good rinsing is enough ?
ate some at a place downtown Houston several years ago and the tail meat was the ONLY thing I could tolerate because they were so muddy/sandy/gritty tasting - - - complained to the Manager but might as well been complaining to the bar stool

I did put the bugs in a big cooler and spray them off with water. I filled the cooler over half way up like 6 times before boiling. I can't wait to do them again. I paid 3.25 a pound for them. What are y'all getting them for? Also just made gumbo with the leftovers.
