Dinner down south: Fried chicken..
Had to get my chicken fix on, so decided on fried chicken, green beans (OUP's fault), mashed taters and gravy.. Started the chicken marinating yesterday in some buttermilk and Louisiana hot sauce, total time: 25 hours.
Then the flour dredge is a mix of flour and corn starch, about 70/30.
Got a couple pieces ready now!
Will have some plated pics up in a bit with the rest of the fixins!

Green beans in progress.. Rendered some bacon first, not sure if I got that pic or not.. Afterwards, I spared some of the drippings for the GB. Sauteed then steamed a bit..
Then I added the bacon and some diced tomato.
Stirred well and simmering now.
Up next is the taters and gravy!!

Sir Chef, the Green'uns look awesome and I can almost taste the Crunchiness in the Chicken that Corn Starch lays down.

Soooo good. You just can't beat the buttermilk marinade. And 24 hour minimum is almost paramount.

I'm on the hunt for a pressure cooker that I can use to fry. Rumor has it this is the key to KFC original recipe chicken. I've played around with spices and am REALLY close to their blend, I need to be able to fry it similar and give it a try.

I read the story of KFC from its beginning and it began with a secret device which turned out to be a pressure cooker. I never did read of the cooking method. I suppose one would put some oil or grease in the bottom of the pot seal it up and start cooking, just not sure if one could fry under pressure? I have wondered and pondered that for lots of years, the spice blend is apealing to my taste, I am not sure if MSG is in it or not... the one thing I have always noticed at KFC the pieces of chicken are smaller than most every where else I have been to....

Good ol MSG. Accent is added to some things I cook, IF it's an extensive spice mix.. I don't use it often, but I can say I use it more often than not. Lol! Popeyes has some smaller pieces as well. I like Bush's and Chicken Express for their birdzilla-esque pieces. I've nailed those 2 as far as flavor; it's a simple brine process but swaying toward the salty end of the scale. It REALLY tiptoes the line between "oh yes" and "oh darn".

I can smell that crispy coasting from here, looks great !!
I've gone to Oil-Less fried chicken years ago and will never go back. If you can find a Big Easy ( preferably ) the first generation its well worth the 100$
The infrared mimics oil fried food exactly without the oil. I'm betting that your mix you have to duplicate KFC would come out great in it.
Nothing, I repeat Nothing comes out dry ever. 16lb turkey fried to perfection in 2.5 hours and juiciest you will ever have.
Good luck on nailing it down, I myself enjoy experimenting in trying to duplicate certain chains foods.

Thank you, sir! I've been on the lookout for a big easy. Found one at Walmart last year, haven't seen it since but... It is bound to be back this year.
For duplicates, so far I've nailed pizza hut pan crust and Rudy's creamed corn. I brought some creamed corn over to my brother for a get together and he asked where the Rudy's was because he hadn't seen them close to his house. Lol!
