Well, I've finally gotten a Pastrami under my belt. Many more to come for sure, I even converted the wife into a Pastrami lover. She would never touch one before but she tried this one with Thousand Islands and Havarti instead of Swiss but I can't complain and she loved it.As for the Kraut, that's a battle I gave up on years ago, she WON'T do it.
Used Rye, Finlandia Swiss , Drunken Sabrett Kraut and Thousand Islands Dressing and of course, sliced chunks of Pastrami.
Into the heat and the rest is history.

Its REALLY hard to find a good place to make these the " correct " way. I know in the City there are quite a few delis that have it mastered.
Do you have a way to slow cook or smoke for a good 10 - 12 hours ?
If so, you and PB may want to grab a packaged Corned Beef and soak it in cold water for a good 6 hrs or more frequently changing the water.
Then just put ur favorite seasonings and ALOT of Cracked Peppercorns and just let it go at 250.
I bet you both would Love it

Wow! That reminds me.. I haven't made pastrami in a while. Did corned beef at the restaurant for a while but we didn't have a walk-in, so the lack of space meant we couldn't keep enough on hand to feed the demand. I devised a quick cure method that worked phenomenally, but I couldn't get my knucklehead line cooks to cook it right. I can't do it all ALL the time. Lol

You can only do so much urself. But the truth is, you need to rely on your cooks to be just another extension of You and unfortunately its hard to get everyone on the same page. I've spent many years in commercial kitchens when in the restaurant supply business and I definitely saw some examples of this. You can spot the difference rather quickly between a bunch of gears lubed with regular conventional oil and a set lubed with Lucas......Txdragon wrote:Wow! That reminds me..
