Well, the title kinda summs it up for today.
First up was taking our little buddy Sledding on his L.L Bean Sled and his Santa Snow Tube at the State Forest. He had a blast and for us it was making great memories for sure
Came home and prepped the Strawberries for Cheesecake Bites and then made the Meatball Parms using Texas Toast, Provolone and Debs Home Made Meat-uh-ballzzz...
Oh man, made for a great Sammich and desert is on the horizon.

Made a HUGE mistake with the desert portion so everyone take note that if you ever attempt hollowing out strawberries and filling them with cheesecake cream, DON'T refridgerate them like I did. They were inedible and completely disgusting and threw every one of them away , even the first one I halfway ate.
Apparently the cold makes the berry juices push up thru the cream cheese and makes the entire thing a pile of Mush !!
Reminded me of the classic movie " Invasion Of The Body Snatchers " where the insides of everything get sucked out and no structure is left..
Just wanted to save anyone that may try these some time and $$
I guess these should be made at room temp and eaten right away, not refrigerated 2 days later

Thank you Sailor and Joe.
Yeah, that's my little sidekick right there, our " life " for sure.
Joe, imagine Strawberry Cheesecake without the bottom crust layer. That's what these " should " have been like.
I've had them before and they taste great, my version was the absolute Worst thing I've made taste wise
