Figured that would wake Russ up :) - sorry bud, been too long

As mentioned on other posts the weather here stinks today. Maybe 40 degrees and a real heavy mist had been falling for a couple of hours. Should switch to rain and falling temps soon.

Anyway, I picked up a new toy dirt cheap so this is a good time to try. I am attempting to Sous Vide some skirt steak and veggies for fajita bowls tonight. It’s in the water bath for about 3 hours and then I’ll sear it in a cast iron pan before serving over brown rice.

Im on board with those been watching for the "cheap" one to give it a try so far about the $80 mark at tarjee.. (target)
after reading about it from another(rex) on here, it definitely has my curiosity
do follow up so I can learn from your endeavor...

Ok, I’m impressed. Went 3 hours and then seared in a cast iron pan. Turned out real good. Only thing I’d change is I bought the meat at WalMart because I had to pick up some other stuff there. Had a bunch of fat and silver skin on it. Oh well, I try and limit my trips to that place anyway.

Ya know, this is one of the FEW cooking gadgets that I don't have lol. My question is this about Mrs Sue Veed.

Is the main purpose of this method to make sure the food is not overcooked and cooked evenly ? I've read that they can get the food temps within + or - 1 degree.

Always been interested in these and my brother has been talking alot about these lately. So basically, if he gets one I'll be not far behind

Fuh heetuz look great btw, I can tell they were packed with flavor and very juicy for sure !

Yea it cooks it to exact temp and comes out incredibly tender. Can’t wait to try a steak and sear it on the Weber.

oh yeah you have it goin on with that last pic, only thing missin is a flour tortilla...
I have to find me one of those souis vide jobberdos...

As far as the silver skin goes just pull that off with a paper towel, a little salt helps your grip on it, on the border they salt and soak in a little fresh lime juice.. :cheers:

Yea I’m just kicking myself for not buying it at Tom Thumb earlier in the week. They had some gorgeous we’ll trimmed skirt steaks. But if it turned that rough cut into good eats it definitely speaks for the technique.

Thanks for the tip on the salt. Never thought of that.

I saw a video somewhere of a guy that smoked a brisket a few hours then put it in one of those things in a vacuum bag

Funny I was just reading about the sous vide technique. What did you think of it? Did you cook the veggies the same time period or longer than the meat? Where did you pick yours up from?

Cooked veggies at the same time. Technically they need to be cooked at higher temp but I finished in the cast iron pan so they were good.
Had an opportunity to pick mine up on a special sale at my work.
