Cajun Caviar
2 cups grated sharp cheddar cheese
1 cup chopped pecans
1 cup chopped bacon
3 pieces chopped green onions
3-4 dashes hot sauce
Mayo to bind all together
Pepper jelly
Mix everything together, use enough mayo to mold into a ball and hold all together. Cover and refrigerate for a couple hours
Take out before serving and spread pepper jelly over ball and serve with any cracker of choice. You will not be disappointed. You may want to prepare only half of this if you are serving other appeteezers. You can also flatten this out and put into a shallow serving dish. Just a warning, does not taste that great until you add pepper jelly.
