After W.V. raised the Collard bar the other day, I am tippy toeing on this cook today.
Picked up a couple bunches of very large and very nice Texas Collard Greens yesterday and they're going in the Pot today.
FIRST THING IS MAKING THE POT LIQUOR or STOCK, if you prefer.
Decided to use the leftover bone from the Christmas Ham and also a smoked Ham Hock but I needed to boil them and then remove the good meat from the Ham Bone.
Just add water and low boil for an hour or so

Re: Collards and Cornbread
After the Stock is ready, it's time to add the Collards
Call them what you want - - I CALL THEM
Lone Star Elephant Ear Collards
Meat removed from Ham Bone and it's read
to Simmer
I have only heard this stuff called
"Pepper Sauce" and it's great on Greens
