Last week I finally remembered to take and use my $25 free groceries ticket to Brookshire Bros. So since I was splurging in a sense I scarfed up on a $16 Ribeye that was one and half inches thick. My plan was to grill it over Charcoal but the weather had different ideas so I drug out my "brand new" Cast Iron Ribbed Skillet and gave her a Seasoning. Some Dinner time I had visions of a beautiful steak with Magazine Grill Marks and Red in the center.

Weeeellll, what I ended up with was a smoke filled house with the stove vent running wide open, the ceiling fans on, the smoke alarm on and the back door open. Not to worry because I was determined. When I first planned on flipping it the I.T. wasn't even close so I had to leave it longer. I used a Bacon Press during the Searing and man did I get the Sear (better describe as CHAR). When it finally reached the I.T. I was looking for, I plated it with the sides and sat down to eat. After about six bites with the Char, I started trimming it off and found that it was very tasty and all was not lost. So I didn't have to go to town and pick us up something to eat after all. :tup:

Took a little longer to finish but there were good bites
inside that Char Sear.

tab that Cast Iron Chris recommended last year.

Turn the heat down next time Parts. I cook steaks in a pan all the time and never have any issues.

WoW; Well you saved me from trying the same process. I have long contemplated the ribbed cast iron skillet for steaks. After reading of your experience, I will stick to the charcoal grill...

I have a ribbed skillet. You need low-medium heat and it gives niiice grill marks.

Y'all are so correct in the heat being the problem but I made the mistake of Giggling the recipe and it backfired big time. Now that I've simmered down some I may try it again BUT ONLY IF I can't use the ECB for some reason and the steak is thawed. :salut:

Sherry bought one just like it, I hate that SOB. It's a pain in the arse and I hate it. After this Post, I'm going to secretly put it in my scrap iron pile at the barn and the next time it hit's ten dollars a hundred it's going to the junkyard

I'm reseasoning mine, after a @%$@%@ cleaning and then it's going into a deep dark place in the cabinet :whiteflag:

I follow the method below for pretty much any meat I do in the grill pan and always have had good results. It's kinda weird to drop ice cubes in a hot pan like that but it works. Seems to make clean up easier as well.

About 4th place in Yuckie Cleans but beats the heck outa rust after many months :D

I will admit that one of my ridged pans is aluminum, nonstick, and has a pour lip. Works great.
