Smoked Prime Rib The Unorthodox Way

Postby woodenvisions » Wed Jan 02, 2019 11:22 pm

Well, the Akorn took flight a while back and now the top lid doesn't seal correctly which makes low smoke temps virtually impossible. Ill probably just buy another new one rather than spend the $ for a new lid.
So I'm looking at my options for the Prime Rib we just acquired and figured I'd try something crazy and put a smoker box with Pecan Chips on the very bottom of the Big Easy...
Who woulda thought I would actually get some smoke from this hack but it was just enough to flavor the PR without overdoing it.
Probably done 6-8 in this thing and every one turns out amazing. Pulled it at 125 IT , wrapped it in a foil with a dab of butter and towel and set in microwave to rest for an hour. Slicing temp was 138,bordering overcooked in my eyes.
Next time ill only do 45 minutes rest because this was cooked slightly more than I'd like but the wife said hers was Perfect, so why wake a sleeping Lion if you know what I mean..
Paired with some Asparagus and Broccoli, life is good !

I was thinking about doing breakfast burritos with some of the end pieces.
The ends are my favorite, Deb likes the center.

Rambo, 2 months ago I was cleaning the cooking grate and I left the lid up open.
The wind caught it just right and moved it a few feet on the deck towards the staircase. Of course I had the wheels unlocked too.
Down it went, all 13 steps...

Didn't break anything, just severely bent the lid hinges and tweaked the lower chamber so it doesn't seal tight so its impossible to do anything lower than 350/75...

I knew better, I rolled the dice and lost.

Looks great to me. Is that side green asparagus? What have you done to them? They look really good.

Thanks Joe,
Yup, Asparagus sauteed in a scorching hot pan with butter and fresh sliced garlic.
Added fresh pepper and an Italian Seasoning blend with no salt.
The butter salted it perfectly.
