Breakfast AND lunch crepes.

Got a request for pancakes this morning and it wasn't specified what kind, so I threw a curveball! Made some crepes with some spiced granny Smith apples and a cream cheese "frosting".

Gonna try some ham and cheese crepes for lunch. What better to do with leftover Thanksgiving stuff than experiment?!

I can't cook crepes, but to keep my grandaughter happy I buy ready made, I just reheat. Yours look exceptional. I need to update my fry pan.

Thanks! You'd probably be really mad to see the pan these came from. Lol! It's just an 8" Rachel Ray brand skillet. It is nonstick and fortunately so far, decently scratch resistant. Think I paid around 80 dollars for an 8 piece set; 2 pans, 2 pots, 4 lids. I'd love to get a true crepe pan though! I could share that recipe with ya if you'd like. If you have any sort of decent nonstick pan, these turn out great!

Skillet, sir! Scratch made batter from a recipe I've tweaked a bit over time. Found a basic crepe recipe some time back that was difficult to work without the proper pan so I've adjusted here and there until I could produce what is pictured from the cookware I have.

1-1/4C milk
3 large eggs
2 TBS melted butter (unsalted)
1-1/2 tsp vanilla extract
1/2 tsp salt
3 TBS sugar (1.5TBS for savory)
1 C all purpose flour

Mix all but the eggs in a bowl first. Beat the eggs before adding, THEN add to the batter and mix til smooth. (Helps avoid lumps this way) if you do get any lumps, they really shouldn't be an issue. They're likely to be very small. I am bugged by lumpy batter though; probably due to OCD. Lol!

Heat a medium (8") nonstick skillet over medium heat until it hits about 350. Should be around 15ish minutes. This time should also allow the batter to rest! Place a small tab of butter on the skillet and if it's nice and sizzly, you're there!

Use a 2 oz ladle or 1/4 measuring cup (whichever you have) and ladle directly in the middle of the pan then swirl the batter outwards to cover the bottom of the skillet. Layer should be fairly thin, adjust how much you scoop based on results!

Let it cook until the top layer starts to set, OR the very edge starts to brown (different doneness levels here).

CAREFULLY flip crepe and cook that side for 20-30 seconds.

Repeat steps 3-5 until you have all you want or run out of batter, whichever occurs first!

To add a note here, your stove may vary a bit. I have a pretty standard 1-10 setting range for my burners and I use 6 for these.
You'll know your stove better than me though. Lol! "Medium" was used as a generalization based upon my own setting.
