Was asked for a large side dish to go with several turkeys being prepared for the Mother Teresa shelter.
8 pounds string beans
1 pound potatoes cubed small
2 pre cooked country style pork ribs finely chopped
2 medium onions chopped
2 Tbsp Tony Chareres
48 oz chicken stock
1/2 cup oil
3/4 cup flour
Note: I usually use bacon instead of the country style pork ribs. But I had the ribs that I had grilled the day before so I used them. They added another layer of flavor with a bit of smoke.
Use oil and flour to make a medium colored roux. Add onions and sauté. Slowly add the stock while stirring. Add the pork, potatoes, beans, and seasoning. Cover and cook on low 3-4 hours, stirring occasionally.
