Pepperoni Potato Wedges

This was pretty simple. I just baked some potatoes until almost done, with a nice hint of firmness. I cut into wedges, sprinkled with garlic powder, red pepper, salt and paprika. Topped with pepperoni slices, cheddar and Mozz. cheeses. Baked until golden brown and served with sour cream and fresh parsley!

In hindsite, I would have added some chopped green onions on top. I had just gotten home from work and I wasn't about to go back out to the store! The game was on!

One more hint; let the baked taters cool til at least lukewarm, and they won't fall apart on you when you cut them into wedges. I didn't wait, and I had many nice chunks, but not all the wedges I wanted! (hey, we were hungry! :oops: )

Yep, that does look like some good grub!! I might give these a go this weekend......kinda like a potato pizza, good stuff!
